New chef and new menu at Port of Bourke Hotel

The Port of Bourke is a much loved institution, a place that played a role in the history of the town for more than 150 years.

But there’s always room for change and licensee Luke Moon is hoping the revamp of the menu will be the drawcard to entice new patrons to the hotel and encourage the regulars to sample the new fare.

To help bring the pub’s men u into line with contemporary taste, he has engaged the services of chef Shane Barwick, who has worked in kitchens in Brisbane, Surfers Paradise and Cloncurry.

Shane, who hails originally from Gilgandra, said he is committed to keeping to the tradition of good Aussie pub food, just adding more flair in presentation and flavour.

“The most important ingredient is flavour and the meals have to be good to look at because then people will love eating it,” he said. Read more in the printed edition of the Western Herald.
